According to the news published in Indian Express, Chef Ranveer Brar has shared a video on his Instagram. In which he is seen telling a special formula for cooking in unrefined oil. In this, he tells that before cooking, heat the oil and when smoke starts coming out, cool it before cooking.

Is this method effective?

Sanchi Tiwari, nutritionist at Lords Mark Biotech, says unrefined oils should be heated until they start smoking and then cooled before using them for cooking. This is a technique used to improve the taste of food cooked in oil. Unrefined oils usually have low smoke points because they contain free fatty acids and some plant impurities. Due to which they can go rancid quickly and the food cooked in them can also taste bad. Tiwari says that heating the oil till it starts smoking removes or burns these impurities, which slightly increases the smoke point of the oil and as a result the oil becomes cleaner.

Nutrients are not lost by heating unrefined oils

Kanika Malhotra, Consultant Dietitian and Certified Diabetes Educator, says, “Generally, unrefined oils do not require heating before use. They are extracted using cold-pressing and retain their natural flavour and bioactives. Does heating unrefined oils affect its nutritional content and flavour profile? Heating may slightly reduce some vitamins and antioxidants, but this depends on the oil and the duration of heating. The overall impact on nutritional value is minor.”
