During your trip to Uttarakhand, you must have eaten Singodi sweets at some point of time. But have you ever wondered why Singodi sweets are wrapped in a leaf, and which tree does this leaf belong to? Otherwise we will tell you. This special leaf that is wrapped in Singodi is of Malu. Malu is a type of evergreen tree, in whose leaves Singodi is wrapped.
Why is Singori wrapped in a leaf?
Narendra Rana, a sweet seller from Bageshwar, told Local 18 that there are many reasons for wrapping Singodi in Malu leaves. For example, wrapping Singodi in Malu leaves enhances the taste of the sweet. This leaf acts as a protective shield for the sweets. The taste of sweets remains in Malu leaves for a long time. This leaf is helpful in keeping the sweets fresh.
Since Malu is an evergreen tree, its leaves are easily available in all types of seasons. By wrapping Malu leaves in Singodi, the sweetness and Ayurvedic properties of the leaves get added to the sweets. Due to which the taste of sweets becomes even more delicious. While eating Singodi, the fragrance of Malu leaves is felt in it.
Singodi is a famous sweet of Kumaon.
Singodi sweets are made and eaten in Kumaon since ancient times. This sweet is also called the companion of Baal Mithai. Singodi is also called patta mithai because of the leaves of Malu. Before wrapping the Malu leaf, the leaf is plucked from the tree and brought. The leaves are cleaned thoroughly with the help of water. After cleaning, the leaf is cut into two parts. Now the leaf is given the shape of a cone.
Flavor increases in leaves
To preserve the cone shape of the leaves, thin needle-sized wood is used. To wrap Singodi in Malu leaves, the khoya is first cooked on low flame and thickened. The mixture is grated well. A smooth mixture is prepared by adding coconut to it. This mixture is wrapped in Malu leaves. The mixture is kept to solidify. In this way Singodi is ready. Singodi is served in Malu leaves only.
