Sonali Bhati/Jalore:- Rabdi made from cow’s milk, which has been made in Ahor of Jalore district for the last many years, has gained a lot of fame not only in the district but also in the country and the state due to its excellent taste. The Rathi family here has maintained this taste for years. For this reason the taste of this wonderful Rabri has spread far and wide.

In Ahor of Jalore district, this Rabri is prepared with great effort at the Rathi Mishthan Bhandar shop located on the main road in front of the Government Hospital. Tourists keep coming here to taste Rabdi. Although Rabdi is available in every sweet shop in every small and big city, but the taste of this Rabdi of Ahor is such that everyone has become crazy about it.

History is 125 years old
Shop owner Mukesh Kumar Rathi told that his establishment is 125 years old. This Rabdi shop has been running since the time of his great grandfather. This Rabri is made from pure cow’s milk. About 10 to 12 kg of Rabdi is made here every day. Rabdi is prepared as per order in wedding ceremonies and parties. Tourists come from far and wide to enjoy the taste of this Rabdi. The price of Rabdi is Rs 450 per kg. Apart from this, only 350 grams of sugar is added to 4½ kg Rabdi, whose sweetness is praised in the entire Jalore district.

This is how rabri is made
18 to 20 kg milk is boiled on low flame for hours and the cream formed on the milk is collected around the pan. When all the milk gets cooked and converted into rabri, then it is prepared by mixing cream and rabri. Later it is cooled and stored in the refrigerator.
