special process of making rabri
To make Rabdi, about 18 to 20 kg of cow’s milk is boiled for hours on low flame, due to which the cream gets accumulated around the pan. When the milk is completely cooked and thickens, then the cream is prepared by mixing it with milk. After this, this mixture is cooled and kept in the refrigerator, which further enhances its taste.
This 125 years of tradition and special taste has established Ahor Ki Rabdi as a distinctive sweet not only in Jalore district but also at the national level.
