In Rajasthani language it is also called raw food. Because this food is not prepared on gas stove but is prepared on cow dung cakes.

There are special confectioners who make this type of Baffle. Who are also called Pandit in Rajasthan. It is said that earlier this food was eaten by Brahmins and they were the ones who prepared it. But with time now everyone is eating this dish. For this reason the confectioner of this food is called Pandit.
This is how Bafla is made
To make Bafla, take flour, semolina, baking powder, mix it and add a little oil to it. After this, add water and knead it well. After that, make it big like a bati, put it in hot water and boil it. After boiling, take it out, let it cool for a while, burn the cow dung tubers and fry it well. After learning it, Clean it, put it in a bowl of ghee, break it and the Bafla is ready.
Prepare the kat like this
Add ghee to wheat flour, mix well, add hot water and knead it tightly. Take some flour and shape it into a fist. Similarly, make fist shapes from all the dough. Heat ghee in a pan and fry all the fist shapes. Once everything is fried, let them cool down, grind them coarsely in a mixer and sift them through a sieve. Roast the coarse wheat flour in the pan for 1-2 minutes until it becomes hot. Heat ghee in a pan and melt the jaggery well. Now add the melted jaggery to the coarsely roasted wheat flour and mix both well. Pour the mixture into the whole plate and garnish it. To set all the spices (almonds, pistachios, gum, sugar, cardamom powder), pour ghee on the whole plate so that it gets set.
