Karauli. In winter, instead of sugar, the use of jaggery increases. The biggest reason for this is that the effect of jaggery is hot. It is also considered beneficial for health. Along with being delicious, it is said to have many properties of iron and vitamin C. Jaggery is consumed by people of all age groups in Karauli. This is the reason that many types of jaggery come for sale in the market as soon as the cold wave arrives, but this time in Karauli, the native jaggery available on the handcart remains the first choice of the people.
Shiv Kumar Chaturvedi, who came to buy jaggery from the handcart, told that the jaggery available in the market contains chemicals, but instead of machines, artisans prepare native jaggery by hand. There is almost no chemical in this jaggery. This jaggery is also tasty to eat. Lavkush Saini, another buyer who came to buy jaggery, said that the jaggery available in the market comes from outside, which is available throughout the year. But this desi jaggery is available only for 2 months. The specialty of this jaggery is that it is pure and soft. It dissolves like water as soon as it enters the mouth. It is a different pleasure to eat bajra roti with this jaggery. Due to being pure, this jaggery is available at ₹ 10 per kg costlier in the market.
Sheruddin Khan who came to sell desi jaggery told that this desi jaggery is made from sugarcane. There is very less chemical in this jaggery of ours. We bring this jaggery from Bari. Farmers prepare desi jaggery, from which we buy jaggery at the rate of ₹ 40 per kg and sell it in the market at the price of ₹ 50 per kg. 8 traders come from Bari and set up carts in the market everyday. More than 4 quintals of jaggery is sold daily. The people of Karauli are very fond of our jaggery because of its sweetness.
