Chief artisan Mahesh Patron explains that the process of making Gujiya is an art, which requires patience and special care of the right ingredients.

Process of making Gujiya

1. Mixture of semolina and ghee: First of all, semolina is roasted in pure ghee on low flame to make it golden, so that it gets a special aroma and crispness.

2. Mixture of dry fruits: Cashew nuts, raisins, almonds, cherries and biscuit crumbs are mixed in roasted semolina. All these ingredients provide rich taste and crispness to Gujiya.

3. Flour: Flour is kneaded with light ghee and water so that the dough is neither too hard nor too soft.

4. Stuffing in the mould: The mixture of semolina and dry fruits is filled in small pieces of flour and given the shape of Gujiya with the help of a special mould.

5. Frying in oil: Gujiya is made golden and crispy by frying it on low flame in hot oil.

Mahesh ji tells that about 20-22 pieces are prepared in one kg of Gujiya, and its price is only ₹ 200 per kg.
