Make bihari style Oal ka Chokha on Chhath festival: These days the festival of Chhath (Chhath 2024) is being celebrated with great pomp. On the occasion of Chhath, various types of dishes are prepared in Purvanchali homes. One of these is Jimikand Chokha without onion and garlic. Yes, these days you will find this special chokha in every house of Bihar. Actually, people like to eat this Chokha along with Thekua prepared in the Prasad of Chhath. Not only this, this sharpener lasts for a week or two. There is no need of even a refrigerator to store it. So let us know how you can easily make and store this traditional Bihari Ol i.e. Jimikand Chokha.
Material-
-1 kg oil i.e. Jimikand
-Half cup mustard oil
-4 to 5 green chillies
-one spoon celery
-one spoon black cumin
-Salt as per taste
-Turmeric half teaspoon
-Ginger 1 piece
-2 lemons (or 2 teaspoons mango powder)
Method of preparation-
First of all, cut the olives into pieces with the help of a knife and wash them thoroughly. Now place it in a pressure cooker and add some water and half a teaspoon turmeric (you can also not add it) and cook it well.
Now carefully peel it and keep it in a big bowl. Now mash it like chokha. Add finely chopped chilli and ginger into it. Also, add one spoon celery, one spoon black cumin, salt as per taste and mix.

Now cut two lemons in it and squeeze its juice well. If you don’t have lemon then you can also add mango powder. But lemon flavor seems more refreshing. Finally add half cup of mustard oil in it and mix this chokha well. Your Bihari style traditional ol ka chokha is ready. Keep it in sunlight for 2 to 3 hours daily. By doing this its taste will increase and it will not spoil. You can eat this chokha for 10 days.
