Material:
– 500 gms baby potatoes (boiled)
– 2 tbsp mustard oil
– 1 tsp cumin seeds
– 1/2 tsp mustard seeds
– 1/2 tsp nigella (kalonji)
– 1/2 tsp turmeric powder
– 1 tsp red chilli powder
– 1 tsp coriander powder
– 1/2 tsp garam masala
– 1/2 tsp dry mango powder
– 1 tsp ginger-garlic paste
– 1 tomato, finely chopped
– 2 green chillies, finely chopped
– salt to taste
– Green coriander, for garnishing

Method for making Aloo Dum: First of all peel the small potatoes and boil them. After boiling, let the potatoes cool down properly. Now put the boiled potatoes in a big vessel and add all the dry spices to it and mix it well with your hand. Now cover them and keep them aside.

-Heat oil in a pan. Add cumin seeds, mustard seeds, and nigella seeds. When they are roasted, add ginger-garlic paste and fry till golden brown. Now add onion, chopped tomato and green chillies and fry well.

-Now add turmeric powder, red chili powder, coriander powder, garam masala and salt. When the spices are roasted well and the oil starts separating from the spices, then add boiled potatoes to it. Mix them well so that the potatoes get a good coating of the spices.

Add a little water and cover the potatoes and cook on low flame for 10-15 minutes. When it is cooked, add finely chopped ginger on top. Now you can add lemon or dry mango powder. Garnish with green coriander and serve hot. Kolkata street style potato dum is ready. You can eat it hot with roti, paratha, or chapati.
