Reva: The festival of Diwali is near, and everything from cleaning to preparation of dishes is going on in everyone’s house. In such a situation, it is not possible to go out and eat. If you want to feed your family something special and delicious this Diwali, then making Rewa’s traditional Rikmaj vegetable is a good option. This dish is known for its unique taste and is also easy to make. This vegetable, prepared from a mixture of some common pulses and special spices, is very popular in Rewa and surrounding areas.
required materials
To prepare the recipe base:
50 grams moong dal (raw)
50 grams urad dal (cooked)
50 grams masoor dal
50 grams chana dal
one teaspoon garam masala
salt as per taste
ground red chilli
fresh chopped coriander
For the spices and vegetables of Rikmaj:
4 onions
a clove of garlic
Green chilli as per taste
Chail Patta 4-6
50 grams oil
200 grams water
2 teaspoons garam masala
700 grams water
Chopped coriander (for garnish)
Method of preparing rikamaj base
Prepare the pulse mixture: First of all, soak moong, urad, masoor and chana dal in one kilogram of water for the whole night. In the morning, take out all these pulses from water, wash them thoroughly and grind them coarsely in the mixer.
Mix spices into paste: Add salt as per taste, ground red chilli, one spoon garam masala and chopped green coriander to the paste of ground pulses. Beat it well with hands so that the paste becomes light and fluffy.
Steaming Process: Apply a little oil on a plate and spread the prepared paste on it. Pour 200 grams of water in a big pan and place the cooker grate in it. Place a plate with paste on the mesh and cover the plate with another plate. Steam on medium flame for 15-20 minutes. After cooking, take it out and let it cool.
Cut into pieces and fry: After cooling, the paste sets like jelly. Cut it into barfi shaped pieces. Heat oil in a pan and fry the pieces until they turn golden brown. Keep the fried rikamaj pieces aside.
How to make Rikmaj vegetable
Prepare the masala: Make a paste of onion, garlic, and green chilies. Heat oil in a pan and add chilli leaves to it. Then add the prepared masala and fry it until it turns golden brown.
Make gravy: After roasting the spices, add about 700 grams of water and let it boil. When it boils, add 2 spoons of garam masala and mix well.
Add the pieces of rikamaj: Now add the fried rikamaj pieces to this gravy and cook on medium flame for 10-15 minutes so that the rikamaj pieces get mixed well in the gravy.
Garnish: After cooking, garnish it by adding freshly cut green coriander leaves on top.
