Ingredients for making Veg Kolhapuri
Potatoes- 2
Carrot- 2
Capsicum- 2
Beans- leftover
Tomatoes – 2 or 3
Cauliflower – 2 cups
Peas – half a cup
Ginger – 1 inch piece
Green coriander – 3-4 teaspoons
Cream – half a cup
Asafoetida – 1 teaspoon
Cumin seeds – 1 tsp
Whole red chillies – 2-3
Sesame seeds – 2 tbsp
Salt- as per taste
Turmeric powder – half a teaspoon
Coriander powder – 2 teaspoons
Red chilli powder – 1 tsp
Garam masala – half teaspoon
Grated dry coconut – one-third cup
Oil for frying the vegetables – as per requirement
Simple way to make Veg Kolhapuri
To make Veg Kolhapuri at home, first take a pan. Now fry coconut, dry Kashmiri red chilies, poppy seeds, sesame seeds, cloves, black pepper, cinnamon, black cardamom seeds in it. After this, take them out in a plate. When it cools down, put them in a mixer and grind them well. On the other hand, cut all the vegetables lengthwise like beans, carrots, potatoes. After this, take peas, cabbage and boil them by adding some salt in water. When it is 80 percent cooked, turn off the gas and keep it aside.
After this, heat 2 tablespoons of oil in a pan on low flame. Add fennel seeds and fry for 15-20 seconds. After this, add chopped onion and cook till it becomes light pink. After the onion is fried, add garlic-ginger paste and now add capsicum to it, cook it a little and then add tomatoes and add salt on top. Cook it a little and when the tomatoes melt, add the prepared masala to it. Now add the already boiled vegetables to the prepared mixture.
Now keep stirring it with the help of a spoon. Now add 1/3 cup milk and the same amount of water. When the gravy of Veg Kolhapuri starts thickening, turn off the gas and add cream and mix it once again. Garnish it with coriander. Now you can serve the prepared Veg Kolhapuri with roti-naan or rice.
