Spinach- 300 grams
Finely chopped onion- 2
Grated Tomatoes- 2
Crushed green chillies – 2-3
Ginger-garlic paste- 1 tablespoon
Mustard oil- 1/4 cup
Cumin- 1/4 tsp
Turmeric powder- 1/4 tsp
Kashmiri chilli powder- 1 tsp
Salt- as per taste
Boiled eggs- 2
Coriander powder- 1 tsp
Wheat flour (optional) – 1 tablespoon
Curd- 1/4 cup
Kasoori Methi and Garam Masala (for garnishing)

How to make Spinach Egg Curry

To make Spinach Egg Curry at home, first wash the spinach thoroughly, chop it finely and dry it a little. Then grate the tomatoes, chop the onion and prepare ginger-garlic-chilli paste. After this, heat mustard oil in the pan. When the oil becomes hot, add cumin seeds in it. Then add ginger-garlic paste and fry. Now add onion and cook till it turns golden. After this add turmeric, Kashmiri chilli powder and salt. Now add grated tomatoes and cook. Cook it until the oil separates. Then add chopped spinach, cover and cook for 2 minutes. Then mix it well with the spices and add coriander powder. Keep in mind that if the water in spinach is separating then add one spoon wheat flour. Then add curd and cook for 2-3 minutes.

On the other hand, lightly fry the boiled eggs, then put them in the spinach gravy. Then add Kasoori Methi and Garam Masala to the gravy and leave it to cook on low flame for 5 minutes. After cooking for about 7-8 minutes, take it out. In this way, Spinach Egg Curry is ready. Now you can serve hot spinach egg curry with roti or rice.
