Ingredients to make Masala Bhindi
Okra – 1/2 kg
Tomato – 2
Onion – 1
Red chili powder – 1/2 tsp
Cumin – 1 tsp
Coriander powder – 1 tsp
Ginger-garlic paste – 1 tsp
Chaat masala – 1/4 tsp
Garam masala – 1/4 tsp
Dry mango – 1/4 tsp
Kasoori Methi – 1/2 tsp
oil – as needed
salt – as per taste
How to make Masala Bhindi
To make masala bhindi, first wash the bhindi and wipe it with a dry cloth. After this, cut one inch long pieces of okra and keep them in a bowl. After this, cut onion and tomato into fine pieces. Now take a pan and put 2 tbsp oil in it and heat it on medium flame. After the oil is hot, add chopped bhindi to it and fry it lightly. Then take out the fried okra in a bowl and keep it aside.
Pour some more oil in the pan and then heat it again. After the oil is hot, add cumin seeds and let it crackle. After the cumin seeds crackle, add ginger-garlic paste and chopped onions and fry them. Cook till the onion turns light golden and fry after adding fit chopped tomatoes. After the tomatoes become soft, add turmeric, red chili powder, coriander powder and let it cook for some more time.

Now add dried mango powder, chaat masala, garam masala and kasoori methi to the mixture and mix. Add salt as per taste and add fried okra to it. Coat the masala well with the bhindi with a ladle. After this, cover the pan and cook the bhindi on low flame for 10 more minutes. Keep stirring the bhindi in between. After the masala bhindi is completely fried, turn off the gas. Serve it with roti, naan or paratha.
