On hearing the name of Rabdi here, its sweetness and waxy texture comes to mind. The demand for Abu’s Rabdi, known for its recipe and taste, is continuously increasing. Apart from the railway station and bus stand, these sweets made in pure milk are being sold at more than 100 shops in the main market of the city including Mount Abu, Mount Road, National Highway. Where around 900-1000 kg of Rabdi is sold every day. The turnover of Rabdi here is in crores.
The history of Abu Rabri dates back to 1968. Murali Bhambhani, owner of Sanvalbhai Rabdi King shop, one of the most famous and oldest Rabdi shops of Abu Road, says that his father had started a Rabdi shop in 1968, which became so famous that now he has 3 branches. Gradually, people liked the taste of Rabdi here so much that the Rabdi here became famous all over the country. After the demand for Rabdi increased, local artisans also started working by learning its recipe. Rabdi is sold in about 70 shops and restaurants in the city. At the same time, he also has shops in Mount Abu and the foothills. Its highest demand is at railway stations and bus stands.
This is the recipe for making rabri
Fat milk is used to prepare Rabdi, so that the creaminess of Rabdi becomes more. First of all, milk is taken in a big pan and cooked on a wick on low flame. While boiling the milk, the cream formed on top is applied on the edges of the pan with a spoon. When about a quarter of the milk is left. Then sugar is added to it. After extracting about 10 liters of cream, about 2.50 liters of milk is left. 350-400 grams of sugar is added to it as per taste. After this, the cream is whisked into the milk from the sides and mixed well. After this, cardamom, pistachio and saffron can also be used to enhance the taste.
Rabdi is sold for up to Rs 450 per kg
The Rabdi prepared here is sold for Rs 250 to 450 per kg depending on the quality. For this, packaged milk or milk brought from nearby villages is also used. Employment of hundreds of families is directly and indirectly linked to this Rabdi business. Apart from tourists, Rabdi is also in demand during festivals and wedding ceremonies.
