Raw papaya – 1
Green chili – 3-4
Dry red chili – 2
Panchphoron masala – 1/2 tsp
Bay leaf – 1
Baking soda – 1 pinch
Mustard oil – 2 tbsp
salt – as per taste

For Panch Phoran Whole Spices
Fennel seeds – 1/4 tsp
Rai – 1/4 tsp
Cumin – 1/4 tsp
Kalonji – 1/4 tsp
Fenugreek seeds – 1/4 tsp

How to make Amitar Khar
To make Amitar Khar, a traditional Assamese dish, take raw papaya and remove the thick skin on top of it. After this, cut small pieces of papaya. After this, cut the green chili from the middle. Now mix panch phoran spices and grind them all together and take them out in a small bowl. Now put oil in a pan and heat it on medium flame. After the oil is hot, put the ground spices, bay leaves, dry red chillies in it.

When the masala starts crackling, add raw papaya pieces and green chillies to it, mix well with the spices and cook covered. Cook the papaya pieces while stirring till they become soft. Papayas will not stick to the pan if cooked while stirring. If you want, you can also add 1-2 spoons of water to the pan. When the water dries completely, turn off the gas.
