Dr. HK Singh, mushroom cultivation scientist of Indira Gandhi Agricultural University, Raipur, the only agricultural university of Chhattisgarh, said that to make pickle of one kg of mushroom, first of all fresh mushrooms should be taken and then cleaned properly. If there is straw stuck to the stalk, it should be cleaned. Then boil one liter of water, cut the mushrooms into small pieces and leave them soaked in water. After that put it in a cotton cloth and squeeze out all the water. Then take the spices for making pickle in a clean vessel. Whatever ingredients are used in mango and jackfruit pickle, the same ingredients should be added.

Mushroom Pickle Recipe
Heat mustard oil in a pan and mix the mushrooms mixed with pickle masala. Keep in mind that the mustard oil should be very hot and should be mixed only after it cools down. Then add one or two spoons of vinegar in it. Then fill it well and keep it in a glass jar. The glass bottle should be air tight. While using, keep in mind that mushroom pickle should not be touched with wet hands. Nor take it out with a wet spoon. In such a situation, mushroom pickle can be kept and used for 3 to 6 months. The price of one kg mushroom pickle is around Rs 450.
