These thick sevs built in the streets of Rampura Kotwali are fried in pure linseed oil, which not only tastes their taste, but they are also considered beneficial for digestion. People come from far and wide to buy these special bites, and that is why they have tasted for years in the streets of Kota.
Kota kota is made at many shops in Rampura area, and the city consumes about 3000 kg of bitter every day. In Rampura alone, 1000 kg of kad is sold daily. The special thing is that their sales increase further during the festive season, when people buy them in large quantities and take them to their homes.
Spices are prepared like this
To make quota bitter, cloves, red chillies, celery, turmeric, salt, half a teaspoon of asafoetida and crushed red chili are added to coarse gram flour. Then a thick paste is prepared with water by adding some oil to it. This paste is deep frying in flaxseed oil from a medium size hole, which causes bitter crunchy and tasty.
Demand abroad
According to the bitter businessman Shashank Bagdi, this family trade has been going on for three generations. It was started by his grandfather in 1961, which has now reached not only across the country but also abroad. Especially Rajasthani people living abroad make special demands for the bitter quota and get it.
Whenever former Prime Minister Atal Bihari Vajpayee and former Rajasthan Chief Minister Bhairon Singh Shekhawat used to come to Kota, former MP Dawoodayal Joshi used to buy them bitterly.
