Hotel operator Soni says that he has been making this dish for the last 30 years. On the demand of the people of the city, a branch is also running on the side of Motihari Chatauni bus stand NH 28. Soni says that noon fry mutton is made with only water and salt. For this, mutton is kept ready by mixing turmeric, salt and chili powder. According to the demand, preparation is started by weighing one kilogram of mutton. Before cooking, green chillies, red chillies, round chillies, cumin and garlic are put in the pan and roasted for some time. Then after adding mutton to it, mix it well for 4-5 minutes and leave it after adding water. In this way, delicious salt-water fried mutton is ready to eat in full 45 minutes.

One kg of mutton to 600 grams of salt-water fried mutton
Soni says that after the process of making, only 600 grams of cooked salt-water fried mutton is available from one kg of raw mutton. After roasting mutton in water, it starts smelling like ghee. It seems as if the mutton has been cooked in ghee only. They say that even though those who eat less oil and spices avoid spicy things, they do not avoid their choice. This is the reason why such people eat salt-water fried mutton only. It is good for taste as well as health. People eat it and also take it home.

1000 rupees per kg is salt-water fried mutton
Soni says that noon fry mutton may cost 1000 per kg. But this rate is not much for the lovers of taste. This is the reason why about 100 to 150 kg of noon fry mutton is sold from morning till evening. Diners come, order, wait and enjoy the delicious Noon Fried Mutton. Each customer eats up to 500 grams of salt-water fried mutton.
