Ingredients to make Palak Idli
Semolina (rava) – 1 cup
Chopped spinach – 2 cups
Carrot grated – 1/3 cup
Curd – 1 cup
Rai – 1 tsp
Urad Dal – 1 tbsp
Chana dal – 1 tbsp
Cashew – 1 tbsp
Ginger chopped – 1 tsp
Green chili – 2
Cumin – 1 tsp
Eating soda – 1/4 tsp
Desi ghee – 1 tbsp
salt – as per taste

Spinach Idli Recipe
To make spinach idli, first wash and clean the spinach thoroughly. After this, break the stalks of spinach and chop them finely. Now put half a tablespoon of ghee in a pan and heat it on medium flame. When the ghee becomes hot and melts, add mustard seeds to it. When the mustard seeds crackle, add urad dal, chana dal and cashews and fry all the three ingredients well.

When these ingredients are well roasted, add grated carrot to it and fry them for 2 more minutes. After this, put 1 cup rawa in this mixture and after mixing it well with the help of a ladle, fry it for 2-3 minutes. After this, take out this mixture in a big utensil and add curd to it and mix it well. After this, leave this mixture like this for 10 minutes.

Now again put half a tablespoon of ghee in the pan and heat it. Add cumin, ginger, green chillies to it and fry for 30 seconds. Then add spinach and mix it well and fry it. After this turn off the gas. When the mixture cools down, put it in a mixer jar and add one-third cup of water and grind it finely and prepare a paste. Now add this smooth paste to the semolina mixture and mix.
After mixing this mixture well with the help of a spoon, add baking soda and salt as per taste. Now take an idli pot and grease all its corners with ghee. Put the idli mixture in it, cover it and let the idli cook on high flame for 15 minutes. After the spinach idli is ready, take it out in a vessel. Similarly prepare all the palak idlis and serve them with coconut chutney or green chutney.
