Ingredients for Paneer Masala
for marination
Paneer cubes – 2 cups
Turmeric – 1/4 tsp
Red chili powder – 1/2 tsp
Garam masala – 1/4 tsp
Ginger-garlic paste – 1 tsp
Desi ghee – 1 tbsp

For Dhaba Masala
Coriander seeds – 2 tsp
Black pepper – 1/4 tsp
Cloves – 3-4
pod cardamom – 2
Fennel seeds – 1/2 tsp
Cumin – 1 tsp
Cinnamon – 1/2 inch piece

for curry
Curd – 1/2 cup
Onion – 1
Tomato – 2
Ginger-garlic paste – 1 tsp
Red chili powder – 1 tsp
Garam masala – 1/4 tsp
Kasuri fenugreek – 1 tsp
Turmeric – 1/4 tsp
Cumin – 1 tsp
Coriander leaves – 3 tbsp
Cloves – 3-4
Cinnamon – 1 inch piece
Bay leaf – 1
Desi ghee – 2 tbsp
Oil – 2 tbsp

Paneer Masala Recipe
To make paneer masala that tastes like dhaba, first take a big mixing bowl and put paneer cubes in it. Add red chili powder, garam masala, turmeric, ginger-garlic paste and salt as per taste and mix well. After this, leave the paneer cubes to marinate for half an hour. After the fixed time, put 1 tablespoon of ghee in a pan and heat it. After melting the ghee, add spicy paneer to it and fry it golden, then keep it aside.
Now take a heavy bottom pan and add coriander seeds, cumin seeds, black pepper, cloves, cardamom pods, cinnamon and fennel seeds and dry roast them on a low flame. When the spices start to smell, turn off the gas and grind them with the help of a mixer and keep the spice powder in a separate bowl.

Now heat 2 tbsp desi ghee and 2 tbsp oil in a pan. When the ghee and oil become hot, add bay leaves, cloves, cumin seeds, pods of cardamom and cinnamon and fry them. Fry till the aroma comes in the spices. After this add finely chopped onion and ginger-garlic paste and cook till the color of onion turns light brown.

After this add prepared spice powder, red chili powder, turmeric and salt as per taste and mix well. After cooking for some time on low flame, add chopped tomatoes to it and cook till it becomes soft. Then make gravy by adding curd and mixing it well. Cook the gravy till it leaves oil. After this, add water as required and cook it.
When the gravy starts boiling and thickens, add the pre-fried paneer to it and mix it well with the gravy with the help of a ladle. Now cover the pan and let the vegetable cook for 5 minutes. After this add garam masala, kasoori fenugreek and green coriander leaves and mix. Tasty paneer masala is ready. Serve it with roti, paratha or naan.
