Ingredients for Paneer Pasandah
Paneer (in one piece) – 300 grams
Corn flour / arrowroot / maida – 2 tbsp
Tomato – 5
Cream – 1 cup
Cashew – 10-15
Almonds – 10-15
Pistachio slices – 1 tsp
Raisins – 1 tbsp
Coriander powder – 1 tsp
Red chili powder – 1/4 tsp
Turmeric – 1/4 tsp
Garam masala – 1/4 tsp
Kasuri fenugreek – 1 tsp
Ginger paste – 1 tsp
Asafoetida – 1 pinch
Cumin – 1/2 tsp
Green chili – 2-3
Green coriander chopped – 2 tbsp
oil – as required
salt – as per taste

How to make Paneer Pasanda
To make paneer pasada full of taste, first take the paneer and cut it into square pieces one and a half to two inches wide and half an inch thick. Now cut these pieces from the middle and make a triangle. Now take dry fruits and cut them into small pieces as well. After this cut tomatoes, coriander, green chillies. Now take some cottage cheese for stuffing and make it into powder and add chopped dry fruits (cashews, almonds, raisins) to it. Then mix salt according to taste.
Now take arrowroot or cornflour whatever is available in a bowl and make a thick smooth batter by adding water. Add a pinch of salt to it and dissolve it with the help of a spoon. Now take a triangular piece of paneer and cut it from the middle in such a way that it remains attached to the bottom. After this, fill the paneer-dry fruits stuffing in the piece and prepare the sandwich by pressing it lightly. Similarly, make all the paneer sandwiches one by one.

Now put oil in a pan and heat it. After the oil is hot, add paneer sandwich and deep fry them till they become golden. After this, take out the fried paneer sandwich in a plate. After this, grind chopped tomatoes, green chilies, coriander and make a paste. Then put some oil in the pan and after heating add cumin, asafoetida and fry it. Then add ginger paste and fry it. After a few seconds add tomato paste and cook.

After cooking the tomato paste for 1 minute, add all the dry spices except garam masala and mix and fry. After some time, when the masala leaves the oil, add fresh cream to it. After cooking for some time, add 1 cup of water and let the gravy boil. After the gravy starts boiling, add fried paneer sandwich and mix it with the gravy with a spoon. Finally add garam masala and salt as per taste. Garnish the tasty paneer pasada vegetable with green coriander leaves and serve.
