Ingredients needed to make Fanu
To make delicious Phaanu, you will need 1 cup of Gahat or Horse gram dal. Apart from this, you will need 2-3 green chillies, 1 garlic, 1 teaspoon coriander seeds, 1/2 teaspoon turmeric, 1/2 teaspoon red chilli, 1/2 teaspoon garam masala powder, 1 teaspoon cumin and salt as per taste. You should also keep 1/4 cup of oil for making phanu and applying tadka in it. You can add tempering to it with cumin and asafoetida. Apart from this you will need mustard leaves and green coriander.
Easy recipe to make Phaanu
To make this famous dish of Uttarakhand, soak horse gram or Gahat dal in water overnight. After waking up in the morning, extract water from the dal and grind it on a mortar. Add some green chillies, garlic and coriander seeds to it and grind it well to make a paste. Now place a pan on the gas, add oil and heat it. When the oil becomes hot, add cumin seeds and fry. After this, add lentil paste in the pan, add salt, chilli, coriander powder, garam masala and mix. After this, pour hot water in the pan and leave it to boil.
When your dish starts boiling, add chopped mustard leaves to it and cook for some time. Let everything cook for about 5 minutes. Now it’s time to add tadka to the fanu. For this, heat oil in a spoon and add cumin and garlic and fry. Now mix it with the things being prepared in the pan and temper it. After this add coriander leaves.
