How to Knead Dough for Poori: Be it a festival or a special occasion, it becomes necessary to start the round of puris. If you see hot, crispy and puffy puris coming down from the pan, then you feel like eating them just by looking at them. When puris are made at home, there is a demand for puffed puris in that too. However, many times puffed pooris are not able to be prepared even if desired. Due to this, the amount of oil in the pan is less and the dough may not be kneaded properly. If you want to make puffy puris and eat them, then it is necessary to prepare the dough properly.

Ingredients for dough
Wheat flour – 2 cups
Sugar – 1 pinch
Milk – 1/2 cup
Ajwain – 1/2 tsp
Oil – 1 tsp
water – as needed
Salt – 1 pinch
Puri Dough Method
If you want to knead the dough for poori, instead of keeping it soft like roti dough, you have to knead it hard. To make the puri puffy and crispy, put 2 cups of flour in the mixing bowl and add a pinch of sugar and a pinch of salt to it. Adding sugar to the flour will prevent the puris from turning brown. After this add half a teaspoon of celery to the flour and mix it. Now add milk little by little to the flour and keep mixing it in the flour.
During this, mash the flour properly. When the flour absorbs the milk completely, add water little by little and knead the dough well for 2-3 minutes by clenching your fist. Keep in mind that the dough for poori has to be kneaded hard, so take special care of this while adding the amount of water to it. After kneading the dough for puri, apply some oil on your hands and apply it over the dough for puri. By doing this the puris will become crispy.

Once the poori dough is ready, cover it with a cotton cloth for 20 minutes and keep it aside. Keep in mind that the cotton cloth should be dry. After 20 minutes, take the dough and knead it again for 1 minute. This will make the dough smooth. Now the dough for making puris is completely ready. You can roll puris of desired size by breaking dough in equal proportion. The thinner the puris are rolled, the better they will puff up.
