This sweet is known all over the world for its taste. The taste of this sweet made from juicy fibers is very delicious. Sambar ki Phini is a hundreds of years old sweet, the taste of which was tasted even by kings and emperors. This sweet was served to the guests during the royal meal at the wedding of Emperor Prithviraj Chauhan.
These sambar balls, which are made like thin wires, are prepared only in a special climate. Feeni sweet is quite famous due to its fine thread like texture. One phoeni is of 20 grams. To make this, the prepared flour is beaten. It has 216 frets placed in a round of 6 each, due to which there are thousands of juicy strings in one fret.
Feeni is made through a difficult process of 3 days.
Confectioner Ramchandra, who makes Phini, said that the process of making Phini is very difficult. It takes three days to make it. Mainly the entire work of this sweet is done by hand. The confectioner told that the process of making Phini is started early in the morning. To make Phini, take twice as much ghee as flour. Ghee and flour are mixed under the open sky at night. It takes several hours to mix it. It is left to set for full 24 hours. After this, its dough is prepared the next day. We stretch it and make it longer and make it in the shape of a garland. Hundreds of strings are attached to a garland, which makes strings in it. In this way, by joining six beads, a garland of thousands of strings is formed. After this, on the third day, the prepared dough is put in a pan of hot ghee and baked in a wooden oven. This phini is used on the third day. It can be taken both sweet and weak.
Feeni was the choice of kings and emperors
Let us tell you that throughout Rajasthan, the work of making Phini is done in Sambhar. The sweets made here are famous all over India. Here, many families have been doing the work of making pheeni for hundreds of years. He says that Pheni was made by his grandfather and great grandfather. Kings and Maharajas were very fond of Sambhar leaves. This sweet was served to the guests during the royal meal at the wedding of Emperor Prithviraj Chauhan.
