Ingredients to make Shahi Lauki
Gourd – 1
Onion – 2-3
Potato – 3
Tomato – 1
Ginger-garlic paste – 1 tsp
Coriander powder – 1 tsp
Red chili powder – 1/2 tsp
Turmeric – 3/4 tsp
Garam masala – 1/2 tsp
Chopped dry fruits – 1 tbsp
Cumin – 1/2 tsp
Green coriander leaves – 2-3 tbsp
Black pepper – 1/4 tsp
Oil – 2-3 tbsp
salt – as per taste
How to make Shahi Lauki
To make Shahi Lauki, first peel the bottle gourd and cut it into small pieces. After this cut potatoes, onions and tomatoes into pieces. Now put onion pieces in the mixer jar and grind it to make a paste. Now take a cooker and put some oil in it and heat it on medium flame. When the oil becomes hot, add cumin, black pepper and fry for a few seconds. After this add onion paste and fry till it turns light pink.
When the color of the onion paste changes, add ginger-garlic paste to it and cook for some time. After this add finely chopped tomatoes and salt as per taste and cook till the tomatoes become soft. During this, cover the cooker and keep stirring the tomatoes in between. When the tomatoes become soft, add coriander powder, chilli powder and turmeric to the cooker and mix.

After cooking for about 1 minute, put 1 cup of water in the cooker and cook till the gravy leaves the masala. After this add chopped bottle gourd and potatoes and mix it in the gravy and mix more water according to need, close the cooker and cook till 2 whistles, then turn off the gas. When the pressure of the cooker is released, add garam masala to the vegetable. Finally, garnish the vegetable with finely chopped dry fruits and green coriander leaves and serve.
