Ingredients to make water chestnut curry
Water chestnut flour – 1 cup
Potatoes Boiled – 2
Cumin – 3/4 tsp
Green chili – 2
Black pepper powder – 1/2 tsp
Coriander leaves – 2 tbsp
Lemon – 1/2
Desi ghee – 2 tbsp
Rock salt – as per taste

Water chestnut curry recipe
If you want to make water chestnut flour curry for fasting, first boil the potatoes and then peel them and cut them into thick pieces. After this, finely chop green chilies and green coriander. Now put water chestnut flour in a utensil and prepare the batter by adding about 1 cup of water to it. Put 2 tbsp desi ghee in a pan and keep it on medium flame to heat. When the ghee melts, add cumin seeds and chopped green chillies and fry them.

After a few seconds, when cumin starts crackling, add boiled potato pieces and mix with the help of a spoon and fry them. After frying the potatoes for 2 minutes, pour the prepared water chestnut solution in the pan and mix well with a spoon. Now let the curry cook for 2-3 minutes. After this, mix black pepper powder and rock salt as per taste in the curry and cover the pan and let the curry cook.

After cooking water chestnut curry for about 5 minutes, add finely chopped coriander and lemon juice to it and stir with a spoon and cook for 1 more minute. After this turn off the gas. Water chestnut flour curry full of taste and nutrition is ready. It can be served with Rajgira ki Puri.
