This vegetable looks like a small watermelon, but in taste it is not sweet like watermelon, but sour. We are talking about Kachri, which is no less than a miraculous vegetable. If you are from Rajasthan, then you will be well acquainted with this vegetable and its taste. But along with Rajasthan, this vegetable is now available in many parts of the country. You will get to eat this vegetable only for 2 to 3 months in a year. But if you have not tasted this ‘nectar’ in these three months, then you are making a mistake. Kachri is called Mouse Melon in English. This vegetable is a storehouse of powerful antioxidants. Know how beneficial this vegetable is.

– Kachri vegetable is rich in protein. It strengthens the muscles in the body.
– Kachri has appetite-stimulating effect. That is, if you do not feel hungry then this vegetable will be very beneficial for you.
– The glycemic index of this vegetable is very low. That means if you have diabetes, then this vegetable can help in controlling your sugar level. Along with this, this vegetable is also rich in magnesium.
– This vegetable has many medicinal properties. Like it helps you get relief from gastrointestinal pain. Along with this, this vegetable can also protect you from many diseases.
– If you want to keep your skin healthy, then this vegetable can become your best friend. Kachri contains a lot of vitamin C and water. Therefore, it helps in the formation of collagen.
Method of making Kachri vegetable
– Wash Desi Kachri/Kachri thoroughly with water and cut it into long pieces.
On the other hand, crush 7-8 garlic cloves well. Add one spoon coriander powder, half spoon turmeric, salt and a little red chilli powder to these cloves. Now add some water and make a paste.
– Heat one tablespoon of mustard oil in a pan. Fry cumin seeds in this oil.
– When the cumin seeds crackle, add garlic paste to it and fry it well.
– When the masala gets roasted a little, add some water to it. Now fry the masala even better. When the oil separates from the masala, then understand that the masala is roasted.
– Now add chopped Kachri pieces in it and mix the vegetable well.
– Cover this vegetable and let it cook on medium flame for 5-7 minutes so that the Kachri can absorb the flavor of the spices well.
– Finally add garam masala and mix well.
– Garnish with green coriander and serve hot.
