Spinach puree – 1 cup
Curd – 1/2 cup
Semolina – one cup
Fruit salt or Eno – 1 packet
Paneer – half cup
Tomato – half cup
Onion – half finely chopped
Green chili – 1 to 2
coriander leaves – finely chopped
salt – to taste
oil – for roasting

Recipe to make Palak Paneer Uttapam

First of all finely chop onion, tomato, green chili, coriander leaves. Grate the paneer and keep it separately. These are the ingredients for your topping. Now take out semolina in a bowl. Add curd, spinach puree and salt to it. Mix it well. Add a little water and prepare the batter. Do not make the batter too thin. Now for topping, add onion, tomato, chilli, coriander leaves, cheese, salt in a separate bowl and mix well. If you want, you can also add any other vegetable of your choice like capsicum, peas.

Now add eno and a little water to the semolina solution and mix it well. By doing this the batter will puff up and the uttapam will become soft. Put a pan on the gas, put some oil in it. Now pour a ladle full of batter on the pan and spread it well. On this, put the ingredients of the topping prepared from above and press it with light hands.
