At the same time, the shopkeeper Ratanpal who makes potato tikki told that there is a crowd of people eating tikki at his shop. He takes great care of cleanliness at the shop.

Shopkeeper Ratanpal said that first grate the potatoes. Add all the other ingredients and mash them well. Knead a smooth dough. Divide it into 10 equal balls. Also, for stuffing, heat oil in a pan and add asafoetida. Then add boiled white peas and fry till they become golden and aromatic.
Tikki is cooked on slow fire
After this, add the remaining ingredients and mix well. Divide it into 10 equal balls. Now flatten each potato ball and fill it with pea balls. Cover it with potatoes from all sides and make a ball. Flatten it a little. Heat half a cup of oil on a large pan and add the tikki. Cook on low flame till one side becomes crispy and the other side also becomes crispy and golden.
How to prepare tikki
After this, filter the curd through a sieve and add salt and sugar to it. Keep it in the fridge till needed. Grind all the ingredients of green chutney with a quarter cup of water to make a smooth chutney. Meanwhile, heat one tablespoon of oil in a pan. Add cumin seeds and fennel seeds and let them crackle. Add tamarind pulp and jaggery and mix well. Cook the chutney on low flame till it becomes shiny and thick.

After this add cumin powder, chilli flakes, black salt and salt as per taste. Mix well. After this place the hot tikkis in a plate. Pour cold curd on top. Add chutney, sev, pomegranate seeds, chaat masala on top and serve. The shopkeeper told that people come here to eat potato tikki not only from Khurja Bulandshahr but also from nearby districts.
300 tikkis are sold
About 300 tikkis are consumed in a day at this shop. The price of one potato tikki is about 40 rupees. Various types of spices are used to make the tikki. The shopkeeper said that whoever eats potato tikki here once, comes running to eat it again. The shop is crowded with people eating from afternoon till late evening.
