Kishan Kumar, a resident of Delhi in Ballabhgarh, Faridabad, said that I have been selling chole kulche at a famous Delhi Walon Ki Shop in Ballabhgarh for 27 years. When I started, I used to sell chole kulche at the rate of ₹ 6 per plate. Now I sell it at the rate of ₹ 40 per plate. I wake up at 6:00 in the morning and start work. I prepare all the goods by 12:00. Then I start selling chole kulche. Our kneaded chole is sold by no one in the whole city. Every day 100 customers come to eat chole kulche.
This is how Chole Kulcha is made
To make chole, soak chickpeas in water with baking soda and keep it overnight. Then boil them and keep it aside. Now add spices like salt, dry mango powder, red chili powder, black pepper powder, cumin powder, ground cloves, dry ginger, coriander powder, carom powder and ground cinnamon and cook on low flame. It is served with kulcha and salad, pickle, green chillies. Customers like it a lot. My timing is from 12:00 noon to 10:00 pm, I sell chole kulcha.
