Sumit Bhardwaj / Panipat: By the way, there is a trend of making Ghevar everywhere in the month of Sawan in Haryana. But, for decades there is no answer to Ghevar of Samalkha in Panipat district. Shopkeepers and confectioners who make this sweet say that the taste of this sweet increases even more with the water here. Due to the sweetness of the water here, there is moisture in this sweet and due to this reason the ghevar here becomes more delicious.

Samalkha town of Panipat is situated on National Highway NH-44 going from Kashmir to Kanyakumari. Ghevar made for three generations
Shopkeeper Sachin Mittal says that the shopkeepers of Samalkha are not able to meet the demand, that’s why many small confectioners also work as Ghevar by setting up street vendors. But many times still the demand is not met. Told that earlier his grandfather used to make ghevar and sell it in Samalkha market. Then his father also started the same work and now his third generation is doing the work of making Ghevar here.

60 days seasonal sweets
Sachin told that this sweet is made only in the season of 60 days. As soon as Sawan starts, Ghevar starts being made in the shops of Samalkha and this sweet is made till Janmashtami. If Ghevar is prepared after Janmashtami, then this sweet is not prepared properly.

Lal Ghevar is the first choice of the people
Ghevar has great importance on Teej, a festival coming in Sawan. The role of ghevar is important in the sweets that reach relatives’ homes.
