First, after leaving the perfume shop, he started making Kachori. Today this Kachori is known as Itra Kachori. The special thing is that he sets up his shop in just 4 hours and sells 500 Kachoris. People are drawn to their shop by the smell.

Pawan Kumar Gandhi, famous as Itra Kachori seller in Bhilwara city, told that earlier our family business was of perfume, but along with this we were also fond of making Kachori, so along with this my father started making Kachori 48 years ago. began. However, he could handle this work only for 8 years. After that I took over the task of making Kachori and I have been making Kachori for almost 40 years.

Pawan Gandhi told that our Kachori is different from all in Bhilwara, the reason is that although there is more chilli in the Kachori here, very less chilli is added in our Kachori due to which this Kachori is soft and tasty. Even an elderly person can eat it easily. All the spices are added in right quantity and less chilli is added in it so that people can eat it easily. Along with this, our Kachori is fried in peanut oil and this oil is changed daily.

Pawan Gandhi told that he sets up his shop near Gol Piau intersection of Bhilwara city, in which he serves spicy items like Aloo Vada, Mirchi Vada along with 500 Kachoris to the people. The potatoes in Kachori at his shop are so delicious that people come to his shop to eat the spicy dishes just by the smell.

Due to this, people think that perfume is added to our Kachori, but due to our family perfume work, we are known as Itra Kachori wala. In this way no essence is added to the Kachori.
