Anshul Gupta, who runs a shop on the main road of Chowk in Farrukhabad, says that he has been preparing Kapoorkand from gourd for the last twenty-five years. This is his ancestral work, and his shop is so famous that people from many nearby districts come here to buy Kapoorkand. Anshul says that it takes about 6 to 7 hours to prepare Kapoorkand from gourd. Currently, it is being sold at the rate of Rs 200 per kg. People from places like Delhi, Kanpur, Jaipur, Kannauj also come to buy this sweet.
Kapoorkand Recipe
To make Kapoorkand, first the gourd flakes are prepared. After this, water and sugar are cooked on low flame in a deep bottom pan to make syrup. The gourd flakes are put in the syrup and cooked for 5 to 8 minutes, so that they absorb the syrup. When the syrup dries completely, the flakes are turned over again and again. When the syrup dries completely and hardens like a cake, they are cut with scissors and prepared into small pieces. Apart from this, fragrant kewda and rose water are added to them, and nuts are also used to enhance the taste.
