Recipe: Nowadays it is so hot that everyone is trying to get relief from it. To avoid the heat, the tradition of eating ice cream or kulfi has been going on since ancient times. You all know that eating kulfi in summer is a different kind of pleasure. Therefore, you can easily enjoy making cashew almond kulfi at home. You can make it with a grown-up person and can also teach your children, so that they will enjoy eating it more. Eating cold things in summer is a different kind of pleasure. So let’s make cold cashew almond kulfi. It is as easy to make as it is delicious to eat. After eating it once, you will feel like eating it again and again. So let’s make delicious cashew almond kulfi.

necessary ingredients:

Full cream milk – 1 liter
Cashews – 1/2 cup (roasted and coarsely ground)
Almonds – 1/4 cup (roasted and coarsely ground)
Sugar – 3/4 cup (according to taste)
Cardamom powder – 1/4 tsp
Kewda water (optional) – 2 drops

Method for making Kulfi:

1. Boil the milk in a large vessel. On low flame, boil the milk while stirring continuously until it reduces to about half. This work may take you about 30-40 minutes.

2. Keep stirring the milk from the sides in between so that it does not burn at the bottom. Use low flame only, otherwise the milk may boil and spill over.

3. When the milk reduces to half, add crushed cashews and almonds to it. Mix well and cook on low flame for 5 minutes.

4. Add sugar and stir continuously to dissolve the sugar. You can increase or decrease the amount of sugar as per your taste.

5. After this, turn off the flame and let the mixture cool down a bit. Add cardamom powder and kewda water, if using, and mix well.

6. Clean the kulfi molds and fill them with this mixture. Let the mixture cool completely.

7. When the mixture cools down, place it in the freezer to freeze for at least 8 hours or overnight.

8. To remove the frozen kulfi from the mould, gently pry the edges with the help of a knife. Dip the mould in lukewarm water for a few seconds and then gently take out the kulfi.

9. Your delicious and aromatic cashew almond kulfi is ready. You can serve it by garnishing it with dry fruits or chironji as per your choice.
