Ingredients for Tomato Rice
Cooked rice – 2 cups
Tomato finely chopped – 2
Onion finely chopped – 1
Ginger paste – 1/2 tsp
Chana dal – 1/2 tsp
Urad Dal – 1/2 tsp
Green chili – 1
Rai – 1 tsp
Cumin – 1 tsp
Fenugreek seeds – 1/4 tsp
Cinnamon – 1 inch piece
Cloves – 3-4
Turmeric – 1/4 tsp
Kashmiri red chili powder – 1/2 tsp
Coriander powder – 1/2 tsp
Cashew nuts chopped – 1 tbsp
Curry leaves – 1 tbsp
Chopped mint leaves – 2 tbsp
Green coriander chopped – 2 tbsp
Oil – 1-2 tbsp
salt – as per taste

Tomato Rice Recipe
To make tomato rice full of taste, first cut mint leaves, green coriander leaves into fine pieces. After this, cut cashews into pieces as well. Now put 2 tbsp oil in a pan and heat it. After the oil is hot, add mustard seeds, cumin seeds, chana dal, urad dal and fry them. After a few seconds add fenugreek seeds and curry leaves to the pan and sauté. After this, put cashew pieces in the pan and fry till they become golden brown.

Now finely chop the onion and put it in the pan and fry on medium flame till it becomes light brown. After this, mix green chili and ginger paste in the pan and fry while stirring with a spoon. After this, put fine pieces of tomato in the pan and cook till it becomes soft. When the tomatoes become soft, add turmeric, red chili powder, coriander powder, mint leaves and salt as per taste and cook while mixing.

When all the ingredients of the pan are cooked well, add cooked rice to it and cook while stirring with a spoon. Now cover the pan and cook the rice covered for 5 minutes. During this, keep stirring the rice with a spoon in between. After this turn off the gas. Flavorful Tomato Rice is ready. It can be served with chutney or curd.
