Which is prepared in a special way from dates, jaggery and dry fruits. If we talk about its price, then you get it for Rs 40 for 100 grams, which is ready after a process of four to five hours. Your mind will be tempted as soon as you see it.
These dry fruits are made from date jaggery
Although jaggery is prepared from sugarcane, it is also made from dates. Many types of sweets are made from date jaggery. Its sweets are made especially in Bengal and Orissa. In some districts of UP, Gajak sweets are made from date jaggery. Neera is also extracted from the sap of date palm tree and toddy is also made through the same process.
How is date jaggery made?
Before making date jaggery, juice is extracted from the stem of the date tree. On the date palm tree, a V-shaped cut is made on the top of the trunk by peeling off the upper bark with a knife. Very sweet juice starts leaking from that cut or incision. There a pot is hung on a peg. Drop by drop of sap drips from the date palm tree, which gets collected in that earthen pot.

At the same time, the juice collected in the pot is called Neera. Now this juice is put in a big iron pan and boiled for hours. When the juice becomes thick enough, it is frozen in the form of balls of about one kilo each. Where the thick juice is poured on a cotton cloth in the form of round balls. This juice turns into jaggery.
Specialty of Date Jaggery Sweets
In UP, Gajak Badam sweet made from date jaggery is made like this. First of all, the sap extracted from the tree is poured into a big pan and boiled for hours. Then when the juice becomes thick in the form of syrup, cloves, cardamom, ghee and gram flour are mixed in it and poured into the mold and then dry fruits are placed on top and left to dry. After drying, a sweet is prepared, which tastes very tasty.
