Ingredients to make Spinach-Paneer Enveloped Paratha
Wheat flour – 1 cup
Flour – 1 cup
Oil – 1 tsp

for stuffing
Cheese grater – 2 cups
Chopped spinach – 1/2 cup
Mozzarella cheese – 1/2 cup
Onion chopped – 1/4 cup
Green chili chopped – 2 tsp
Green coriander chopped – 2-3 tbsp
Chaat masala – 1 tsp
Butter – 4 tbsp
salt – as per taste

Spinach-Paneer Enveloped Paratha Recipe
To make Palak-Paneer Lifafa Paratha, first take wheat flour and all purpose flour in a deep bottomed utensil. Mix both well and add a little salt and mix. Now add water little by little and knead soft dough. After this, after adding 1 teaspoon of oil to the flour, knead it again and cover it with a cloth and keep it aside for some time. After this, take a little flour in a small bowl and make a thick batter by adding 4-5 spoons of water to it and keep it aside.
Now add grated paneer, chopped spinach, finely chopped onion and green chili pieces in another vessel and mix. Prepare the stuffing by adding mozzarella cheese pieces, chaat masala and green coriander leaves and salt as per taste and mash them well. Now knead the dough again and make balls of equal proportion from it. After this take a ball and roll it into a square shape.

After this, place the prepared stuffing in the middle and fold the two opposite corners of the belly roti and press it lightly. After this, with the help of a brush, apply the prepared flour solution on it. After this, fold the remaining two sides of the roti and give it the shape of an envelope. Similarly prepare all the Palak-Paneer Lifafa Parathas.
Now heat a nonstick pan/tawa on medium heat. After the griddle is hot, put a little butter on it and spread it when it melts. After this put the prepared parathas on the griddle and roast them. Flip the paratha and roast it till it turns golden brown from both the sides and apply butter. After this take out the paratha in a plate. Similarly prepare all the Palak-Paneer Lifafa Parathas. Serve it in lunch or dinner.
