Ingredients for making Punjabi Chole
Chickpeas (chickpeas) – 250 grams
Tomato paste – 1/2 cup
Onion finely chopped – 2
Cinnamon – 1 piece
Tea leaves – 1 tsp
Ginger – 1 inch piece
Green chili – 2-3
Sweet soda – 1/2 tsp
Dry mango – 3 tsp
Black pepper – 1/2 tsp
Cloves-4-5
Rai – 2 tsp
Cumin – 2 tsp
Fenugreek seeds – 2 tsp
Fennel seeds – 1/2 tsp
Bay leaves – 2
Dry red chili – 2-3
Oil – 2 tbsp
salt – as per taste
Punjabi Chole Recipe
To make Punjabi style chole, take water in a utensil and put sweet soda in it. Now put chickpeas in this water and keep them soaked for 7-8 hours. By soaking in water, the chickpeas will become soft and swell. Now put cumin seeds, fenugreek seeds and fennel and all other dry spices in a pan and dry roast them on low flame. After roasting the spices, take them out in a bowl and let them cool. After this, grind all the spices finely with the help of a mixer.
After this, put the soaked chickpeas in the cooker and add water as needed. Now tie one spoon of tea leaves in a cloth and make a bundle and put it in the cooker. After that cover the cooker and boil the chickpeas till 5-6 whistles. After this, let the cooker cool down, then open the lid and take out the tea bag and separate it.

Now put ginger, green chillies, black pepper, cinnamon and cloves in the mixer and grind them finely and prepare a paste. Now put this prepared paste in boiled chickpeas and mix it. Now put ground dry spices in a pan and fry for some time. Add tomato paste, dry mango powder, black pepper powder to it and cook till it thickens by adding chickpea water. After some time, mix the boiled chickpeas in it and cook it well.
Now put oil in another pan and heat it. Add finely chopped onion to it and fry till it turns golden. Then add prepared chickpeas, cover the pan and let it cook for 15 minutes. You can also use a little water as per need. After this, add finely chopped green coriander over the chickpeas and turn off the gas. In the end, garnish the Punjabi Chole curry with onion rings and tomato slices and serve.
