About 90% people in India drink tea twice a day. If we look at Austin, an Indian drinks 26 cups of tea in a month. So around 53 percent once a day  Drink coffee. Tea leaves are bitter in taste whereas coffee is also bitter in taste. But sugar is sweet. What is the fact behind their being like this? Let us know what is the science behind it. 

That is why coffee and tea are bitter 

People often avoid eating bitter things. . But still it is quite bitter and people drink it. But why is it quite bitter? Have you ever thought about this? Let us tell you. The reason behind bitterness in coffee.  That’s caffeine. Some amount of caffeine is present inside coffee beans. Caffeine tastes bitter. One reason behind this is that the coffee beans are roasted a lot. This makes its taste more bitter.

Chlorogenic acid present in coffee is also a reason for its bitterness. The taste of tea leaves is also bitter. The reason behind this is the elements present in it. Tea leaves contain catechins, polyphenolic compounds such as tannins. Due to which it is bitter. The length of time the tea is kept steeped. The amount of tannin increases by the same amount. And it becomes equally bitter. 

Sugar is sweet because of this

Many people in India are fond of eating something sweet after eating. It is appropriate to use sugar in sweets. Because if sugar is not added then the sweet will not be sweet. There are two types of sugar made, one made from sugarcane and the other made from fruits. Both have different names. Which is made from sugarcane. It is called sucrose and the sugar made from fruits is called fructose. The chemical structure of sugar is like this. When we eat sugar or sugar. So the receptors present in our tongue to identify sweet taste tell the brain that it is sweet.
