Rampur: There is an 80 year old shop in Rampur, UP. Gajak made at this shop is still famous for its freshness and special taste. The demand for this Gajak, made by the artisans here using traditional methods, increases significantly in winter. Dinesh Goyal, the owner of this shop, says that this process has been going on for generations and even today Gajak is prepared in the same special way as it was done earlier.
Mixture of jaggery, sesame and peanuts
To make this Gajak, first of all jaggery is melted. Artisans cook jaggery on low flame in a big iron pan. So that its color and sweetness remains intact. On the other hand, peanuts and sesame seeds are roasted on low flame. So that its taste can improve. During this process, care is taken that neither the peanuts are over-roasted nor the sesame seeds burn. Because this can make a difference in the taste of Gajak.
hammering with a wooden hammer
The most special thing about Gajak is that it is made by pounding it with a wooden hammer. Dinesh Goyal says that this traditional method is the identity of our shop. First, the mixture of jaggery, peanuts and sesame seeds is spread on a big pan. Then it is allowed to cool slowly. When it gets half cooled, a thin layer is formed by pressing it evenly with a wooden hammer. After this it is cut into small pieces.
full of taste of simplicity
No artificial flavors or preservatives are added to the Gajak here, due to which its taste is very natural and wonderful. The specialty of this shop is that the taste and quality of the Gajak here has remained the same for years.
