Gujarat: Everyone likes to eat curd, especially in the winter season when the taste of raitu or curd with hot paratha doubles. Homemade curd is always tastier than market curd, but the process of setting curd often proves difficult for women in winter. Despite trying many recipes, making perfect curd becomes a challenge. Keeping this problem in mind, today we are telling you some easy tips for making curd in winter, with the help of which you can easily make perfect curd.
Make perfect curd from full cream milk
The first step to making curd in winter is to heat the full cream milk properly. First of all, heat the milk well and then add milk powder to it and mix well. After this, leave the milk to cool down a bit. When the milk becomes lukewarm, add one spoon curd to it and keep it covered at a place where no one can touch it. With this process, perfect curd can be easily frozen even in winter.
Use the correct dosage
It is very important to use right temperature and right quantity of curd in making curd. In winter, the temperature of milk should not be too cold. If the milk has cooled down, heat it lightly again. If you are making curd from half a liter of milk, then use one spoon of curd. Using the right amount of curd helps in setting the curd and ensures that the curd is prepared well.
use green chillies
Use of green chillies in cold weather can also be helpful in setting curd. First of all, boil the milk and cool it slightly. Then add one spoon curd to it and mix well. Now wash one green chilli, drain its water and soak it in milk and keep it in a warm place at room temperature. Green chillies are used to set curd quickly, due to which good bacteria are produced in it.
Importance of heat for setting curd
To set curd, it is necessary to have heat. You can wrap the hot pan in a casserole and add curd to it. This will generate good bacteria in the curd and you will get a perfect curd. Also, adding curd to the pulao will improve the growth of bacteria, which can cause the curd to set quickly.
It is best to apply curd during the day.
If you want to make curd in winter, then apply it during the day only. The weather is a little hot during the day, due to which the curd can freeze easily. Apart from this, start the process of making curd only after heating the milk. Another way is to keep hot water in a vessel and add curd to it and cover the pan well. This method is also effective in setting curd.
